Instructions

  1. Pound the chicken breasts to an even 1/2-inch thickness using a meat mallet or rolling pin. Place between plastic wrap to prevent splattering.
  2. Set up a breading station: Place flour in one shallow dish, beaten eggs in another, and combine breadcrumbs, Parmesan, oregano, basil, garlic powder, salt, and pepper in a third dish.
  3. Season chicken with salt and pepper. Dredge each piece in flour, shaking off excess. Dip in beaten egg, then coat thoroughly with the breadcrumb mixture, pressing firmly to adhere.
  4. Heat olive oil in a large skillet over medium-high heat. Fry breaded chicken for 3-4 minutes per side, until golden brown and crispy. Transfer to a paper towel-lined plate.
